Broccoli Stir Fry

As much as broccoli is served in many Chinese restaurants in the west, it is actually not a Chinese vegetable. It is originally from Italy instead. However, broccoli does taste delicious when prepared in a number of traditional Chinese cooking methods, such as stir-frying and steaming. Broccoli is also very nutritious. It is high in dietary fiber, Vitamin C and Vitamin A.

This simple broccoli stir-fry dish is a tasty dinner side dish and takes only a few minutes to make. The main flavoring ingredient in this dish is the Shoaxing cooking wine which is a type of rice wine and has a taste similar to dry sherry. Together with the garlic and a little sugar, the Shaoxing cooking wine adds a wonder aroma and a hint of sweetness and nuttiness to the broccoli.

Ingredients:
  • 1 pound broccoli, cut into small florets.
  • 4 cloves garlic, sliced
  • 1/2 teaspoon salt
  • 1 tablespoon Shaoxing cooking wine
  • 1/2 teaspoon sugar
  • 2 tablespoons vegetable oil
Servings:
  • 3 to 4
Directions:
  1. Place a stainless steal wok on stove.
  2. Turn heat to medium high and add oil.
  3. When oil is hot, add garlic.
  4. Stir fry garlic for 10 seconds.
  5. Add broccoli and stir fry broccoli for about 1 minute.
  6. Add salt and mix with broccoli.
  7. Add sugar and mix.
  8. Add wine and cover lid.
  9. Let it cook for about 40 seconds.
  10. Open lid, turn off heat and serve on a plate.
Notes:
  • The dish tastes the best when served warm right after the broccoli has been cooked.
  • Donít overcook. The broccoli should be slightly crunch after cooking.
  • Shoaxing cooking wine can be found in most Chinese supermarkets. If it is not available, dry sherry may be used instead.
