Egg Fried Rice

Egg fried rice is delicious. It is also one of the simplest to make. With leftover rice, it takes no more than 10 minutes to prepare and cook this dish.

Instead of using salt, we use soy sauce to season the rice at the end. When the soy sauce caramelizes in the pan, it gives the rice a wonderful aroma and a very appetizing amber color. We also add some scallions at the end to make the dish look and taste terrific.

Ingredients:
  • 2 cups cooked rice
  • 4 large eggs, beaten
  • 1/4 teaspoon salt
  • 1/2 cup scallions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
Servings:
  • 1 to 2
Directions:
  1. Add salt to egg and mix well.
  2. Place non-stick pan on stove.
  3. Turn heat to medium and add oil.
  4. When oil is hot, add eggs.
  5. Stir fry egg until cooked.
  6. Add rice and stir fry for about 2 minutes.
  7. Add soy sauce and mix well.
  8. Add scallions and mix well.
  9. Turn off heat and serve on a plate.
Notes:
  • Eggs need to be fully cooked before adding the rice.
  • We use leftover rice which has been refrigerated overnight.
  • Only add the scallions at the end otherwise they will loss some refreshing flavor.
