Ham Ketchup Fried Rice

This is one of our favorite lunch dishes. It is so simple to make and yet so tasty. Using leftover rice, we normally use less than 10 minutes to prepare and cook the dish.

The combination of ham, ketchup and green peas really make the fried rice taste delicious. Kids really like the tangy flavor of this fried rice.

Ingredients:
  • 2 cups cooked rice
  • 4 ounces sliced ham, coarsely chopped
  • 1 tablespoon vegetable oil
  • 1-1/3 cups frozen peas
  • 1-1/2 tablespoons ketchup
  • 3/4 tablespoon soy sauce
Servings:
  • 1 to 2
Directions:
  1. Add soy sauce to ketchup and mix well.
  2. Place a non-stick pan on stove.
  3. Turn heat to medium and add oil.
  4. when oil is hot, add ham.
  5. Stir fry ham for about 1-1/2 minutes.
  6. Add peas and stir fry for about 2 minutes.
  7. Add rice and stir fry for about 1-1/2 minutes
  8. Add ketchup mixture and stir fry for 1 minute.
  9. Turn off heat and serve on a plate.
Notes:
  • You may use any of your favorite ham in this dish.
  • We use leftover rice which has been refrigerated overnight.
  • For best results, the ketchup mixture should be cooked until it just starts to dry up.
