Shrimp Stir Fry

This is a classic Chinese shrimp dish. Using simple ingredients, it is very easy to make.

One of the main flavoring ingredients in this dish is the Shaoxing wine which is made from fermented rice. It is very aromatic and has a taste similar to dry sherry. It is used in many Chinese dishes. Together with the ginger, the Shaoxing wine adds a wonderful flavor and aroma to the shrimp. In addition, the Shoaxing wine also adds a nice amber color to the shrimp, making the dish look and taste great too.

  • 1 pound shrimp, deveined and padded dry with paper towels
  • 1/4 cup ginger, sliced
  • 2 tablespoons vegetable oil
  • 1-1/2 tablespoons soy sauce
  • 1/2 tablespoon Shaoxing cooking wine

  1. Place stainless steel wok on stove
  2. Turn heat to medium high and add oil.
  3. Turn heat to high and add oil.
  4. When oil is hot, add ginger.
  5. Stir fry ginger for 1-1/2 minutes.
  6. Turn heat to high and add shrimp.
  7. Stir fry until color of shrimp turns red.
  8. Add soy sauce and mix well.
  9. Add wine and stir fry for about 1/2 minute.
  10. Turn off head and serve on a plate.
  • Make sure to pad the shrimp really dry with paper towels. Otherwise, the dish will become too watery.
  • Cook the shrimp with the shells on to keep the flavorful juices.
  • Dry sherry may be used as a substitute for Shaoxing wine.
